Mike Maenza: From Crawfish Pots to Culinary Innovation

  • Mike Maenza began his culinary journey in 1986 with a small crawfish catering business, Mr  Mudbug, Inc.—a passion project that grew from backyard boils into a respected local brand.
  • His transition into the restaurant scene, notably with the King Creole concept, deepened his appreciation for bold, layered flavors—ultimately shaping his vision for large-scale food production.
  • In 2003, leveraging his restaurant and catering expertise, Mike founded MMI Culinary to fill a niche: delivering “home-cooked” style, high-quality, ready-to-use sauces, soups, gravies, marinades, and entrees to restaurant operators and foodservice providers.

These brands reflect Mike’s commitment to authentic, bold, and handmade flavors—not just processed commodities. Each brand line is a tribute to his roots: from the mudbug boils of his catering days to the full-scale production kitchen we operate today.
